If water and oil don't mix, why do they mix in cookies and cakes?
So you know how you make cookies or cakes and you add water and oil. Do they separate or do they mix. and if they do separate wouldn't one half of the cookies taste different than the other, and if they do mix, how?
They still don't mix. You add eggs to cakes and cookies, the egg yolks contain lipids that act as detergents that help bind the liquids and fats together.
